It’s summer. It’s hot. Let’s be honest, nobody wants to be in a hot kitchen slaving away over meals! I’m on vacation this week and I’d much rather be spending my time on the back deck after the beach. My kids, however, still seem to want dinner, so I’m on the clock for meal time!
Here are a few simple ideas
for how to eat well this summer without spending time cooking in a hot kitchen!
The best salsa ever: this is courtesy of my sister and while I can’t give the exact secret recipe away, it’s all about food combining here. Chop up some tomatoes, avocado, a red onion, a can of corn and can of black beans. Combine and throw some fresh lemon juice over the top. It’s great as salsa, over brown rice or even over scrambled eggs.
Waldorf Salad: A few grapes, apples, walnuts and celery chopped and combined with a little plain or vanilla yogurt.
Egg/Kale Combo: This one is easy! Saute some kale in olive oil. Sprinkle with salt, pepper, dill and any other spice of choice. Crack and egg over the top for a little protein and fry on top.
Summer up your salad: It’s so easy to get into a salad rut and just use the standard tomato and cucumber but in doing so you are missing a world of goodness! Strawberries, avocado and walnuts make an amazing combination on a salad. Grilled veggies, brown rice with lemon and olive oil over greens is delicious. Think of the restaurant salads you love and copy those (perhaps without all the extra cheese on top). I guarantee it will taste better at home with some homemade salad dressing.
Grill it!: Everything is better on the grill. Throw some veggies on there and a piece of quality meat and there you go. Heck, go buy a whole wheat pizza dough and grill up a healthy pizza!
Sliced, fresh, tomatoes on whole grain toast: So simple. So delicious. Add avocado slices for something a bit more filling.
Tomato & bread salad: Combine diced fresh tomatoes, cucumber and cubed toasted whole grain toast with olive oil and vinegar. Toss in a big bowl and enjoy.
